How to make a TARDIS cake

On this week’s show Great British Bake Off winner and resident Doctor Who baker Edd Kimber showed the fan show guys how to make a TARDIS Battenburg cake! Presented by Christel Dee. Too bad it’s not bigger on the inside or it’s not flying through space and time, but it should be sweeter on the inside and it will make you want more!

TARDIS Battenburg cake recipe was made available

Battenburg Cake
350g unsalted butter, room temperature
350g caster sugar
1 1/2 tsp almond extract
6 medium eggs
280g plain flour
100g ground almonds
1 tsp baking powder
1 tsp vanilla extract
Black food colouring

Decoration
450g white marzipan
1-2tsp navy blue colouring
200g white sugarpaste

Buttercream
100g unsalted butter, room temperature
200g icing sugar
2 tsp vanilla extract
1 tsp lemon extract

Lightly grease a two 9inch square cake pans with a little oil and line with a strip of parchment paper.

In a large bowl beat the butter and sugar together for 10 minutes until light and fluffy, then beat in the almond extract. Add the eggs a little at a time, beating until combined before adding more. Add the flour, almonds and baking powder and mix gently until just combined. Divide the batter equally between two bowls. Add about 1-2 tsp black food colouring to one bowl and about 1/2 tsp to another. Beat to combine. Scrape each batter into one of the prepared pans and level out. Bake in the preheated oven for about 25 minutes or until risen and coming away from the sides of the pan. Allow to cool in the pans for 15 minutes before carefully transferring to a wire rack to cool completely.

To make the buttercream place the butter into a large bowl and beat until smooth and creamy. Slowly add the icing sugar and once all has been combined beat in the vanilla and lemon. Beat the buttercream on high speed or until light and fluffy.

For the decoration knead about 1-2tsp of blue food colouring into the marzipan until uniform in colour.

Cut the cooled cake into equal sized strips, 5 from the black sponge and two from the grey (you can use the left over grey for another recipe). On a work surface lightly dusted with icing sugar roll out the marzipan into a large rectangle, big enough to wrap up the battenburg. Spread the marzipan with a thin layer of buttercream and assemble the cake strips into a battenburg (sticking exposed sides of cake with a little extra buttercream). Very carefully roll up the cake inside the marzipan. Trim off the ends to create a neat finish.

To give the cake its finished TARDIS decoration roll out the sugar paste on a work surface lightly dusted with icing sugar and cut out a rectangle just smaller than the top of the TARDIS. Lightly dampen the back of the rectangle with a little water and place this, damp side down, onto the cake. Use an edible marker pen to copy the text from the panel of the side of the TARDIS.

(Kept in a sealed container this cake will keep for up to three days)
